An easy to make, but great tasting tomato soup, that can moonlight as other things as well.

  1. In a medium sized saucepan, heat a bit of oil or butter over medium heat, add shallot and pepper, cooking until soft – about 5 minutes
  2. Stir in garlic, cook for about 30 seconds more
  3. Add can of tomatoes, stirring occassionally and breaking up the tomatoes with a wooden spoon while heating
  4. Stir in seasoning, pepper flakes and sugar
  5. Carefully transfer to a blender container or use an immersion blender to puree, serve warm
Recipe Notes

Yields 3, about 1-cup servings. Each serving will be about 50 Calories, 8g of carbs and 2g protein

Substitutions: Your favorite onion can be substituted for the shallot. If you don’t have Italian seasoning, season to your own tastes with what you have. Do not skimp on the tomatoes though, they make the soup what it is.
